Well, for a while now, I have been teaching my patients and students alike that organic foods may be healthier for you because of their increased nutrient content. (In addition to not being sprayed with toxins and pesticides). The idea behind this claim seems to be playing-out in the research; it goes like this…. “Phytonutrients, the ’super-nutrients’ that have been found to fight-off cancers, reduce the incidence of diabetes and cardiovascular disease and are incredible anti-oxidants that allow us to withstand the barrage of oxidative factors in our lives, are created in the developing fruit or vegetable as a necessity against the damaging and destructive forces of nature. Extreme temperatures, bugs, fungi, toxins, etc. all help the fruit or vegetable synthesize and create these ’super-nutrients’. Organic produce has to fight to survive these stimuli more than non-organic produce does and will therefore have a higher concentration of phytonutrients.”
Here’s a new report by the French Agency for Food Safety (AFSSA) that states organic foods are better for you and contain less pesticides and nitrates, and have higher levels of nutrients, minerals and antioxidants.
