In a study involving 15 healthy subjects, the addition of 3 g cinnamon per day (in rice pudding) was found to significantly reduce the amount of insulin required to properly deal with the increase in blood sugar from the pudding.
The study also showed that 1 g of cinnamon was too little. There was another study referenced in this one that used 6 g of cinnamon per day in rice pudding that had similar effects to insulin but also helped the stomach to empty its contents into the intestines faster and increased the feeling of fullness in the people that participated.
My advice: If you are participating in the Precision Nutrition program at Optimum Function, you already know about the “10% foods” principle; if you are not participating in the program, you can learn about them here “Strategies for Eating in 2009 and Beyond”. If your “10% food” happens to be something sweet like rice pudding……pile on the cinnamon! It will help your body deal with the extra sugar load; reducing the risk of developing insulin sensitivity, insulin resistance and possibly even type 2 diabetes.
